Strawberry Cupcakes


Okay, I am going to cheat a little bit and post a recipe. It is looking like it is going to be 4 or 5 years before I get the cookbook finished. Tricia and Trena wanted the recipe so here it is.

I have the cupcake making down to a science. Walmart (Wilton) has the cutest cupcake papers with picks (packaged together) for all different seasons. For Easter they have bunny picks and egg picks. To fill the cupcakes, I use an ice cream scoop and fill them only half full. They come out perfect every time. For the icing, I use disposable Wilton bags with a "1M" tip.

With all of these tools, I can crank them out much faster than I ever did with my regular spoons and knives and they look so much better. Here you go:

Strawberry Cupcakes

1 White Cake Mix (NOT Pillsbury)
1 Small Box Strawberry Jello
½ C. Sugar
2/3 C. Oil
4 Eggs
1 ¼ C. Pureed Frozen Strawberries in Syrup (Process in Food Processor - Do Not Drain)

Mix dry ingredients together. Add remaining ingredients. Mix for about 2 minutes. Line muffin tin with liners. Fill half full will batter. Bake at temperature on box for about 15 minutes. Don't overcook. Cool completely.


Cream Cheese Icing

2 Sticks Butter
2 8 oz. Cream Cheese
1 2 lb. Pkg. Powdered Sugar

Soften Butter and Cream Cheese. Mix Powdered Sugar in well.
