2 C. chopped chicken (I buy a rotisserie chicken in the deli section for a quick meal)
1 small bag Nacho Doritos (You can use the baked Doritos for less fat)
1 small chopped onion
1 4 oz. can green chilies
1 10 oz. can enchilada sauce
1 10 oz. can cream of mushroom soup
1 12 oz. can of evaporated milk
2 C. Monterrey jack or Mexican blend cheese
salt and pepper to taste
Line 9 x 13 pan with Doritos. Mix together remaining ingredients except cheese. Pour on top of Doritos. Bake at 350 for 30 minutes. Top with cheese and continue cooking until cheese is melted.
