Breakfast Burritos

18 eggs
1 lb. hot sausage or chorizo
1 heaping teaspoon salt
1 heaping teaspoon dried minced onion
fresh ground pepper
cheese
fresh tortillas (I like to get mine from Rosa's)

Cook sausage or chorizo until browned. Set aside. Beat eggs with seasonings. Scramble in skillet until almost done. Add sausage/chorizo. Place egg mixture in tortilla and top with cheese. Roll up and wrap individually in aluminum foil. Freeze. When ready to eat, place burrito on paper plate and cook in microwave on 60% power for 4 minutes.
